I miss potatoes. A lot. The itchy mouth, hives, flushing, and rash my body experienced when it comes in contact with potatoes? Not so much. Early on in my allergy journey I was trying to figure out what recipes I could make, and I came across this Whole Foods recipe for mashed cauliflower. It is super easy, simple, and delicious! You only need a head of cauliflower, a pot for boiling, olive oil, salt, and pepper. It’s that easy!
I’m not going to re-type the recipe (that would be silly and plagiarism) but will provide you a list of things it pairs great with:
- Fried chicken (I’m still working on this recipe, don’t worry, I’ll post it eventually)
- Lemon Pepper Salmon (you can see it in the picture for my lemon-pepper salmon)
- Salt and Pepper Chicken Wings
